Taco Bao is a fairly new fast causal spot located near downtown Greensboro, NC in a live/use space for students of the nearby university. It calls itself a mix of Mexican and Asian/Korean foods and with the Carolina Bao ($4.50) it executes this concept really well. The bao bun has the Chinese snacking background with its steamy soft, moist, chewy and pillowy texture. It allows the flavors of the thinly sliced pork belly and sweet asian (hoisin like) barbecue sauce to come forward with each bite. I especially like the fact that the pork belly was sliced so thin that the fat of the pork belly melts and balances with the soft bao bun. The added touch to this simple, yet flavorful snack was the braised red cabbage that gave it a nice bitterness and crunch to contrast the fatty pork and sweet sauce. Four ingredients is all it took to make this delicious Bigtime Bite... until the next one ✌🏽
