03/23/17 Crispy Pork Belly at Michael's Genuine Food and Drink in Miami, FL. My ideal version of pork belly has three important characteristics. First, it has to be nice and crispy to give it some texture and provide a nice contrast to the fatty part of the pork belly. Second, while there will obviously be a decent amount of fat in any pork belly, my ideal version is fairly meaty and there can't be an astronomical amount of fat in the pork belly. I know this is contrary to how some people like their pork belly, but hell, if I didn't put some kind of constraints on what I ate, I would seriously be as big as a house. Third, it has to have great flavor to distinguish it from any other version of pork belly and has to have an accompaniment that complements it well without overpowering it or being so underwhelming that you don't even know it's there. Michael's version of pork belly was outstanding! It had all three characteristics described above and is definitely one of the tastiest pork belly dishes I've ever had! The texture and spiciness of the kimchi complements the pork belly well without overpowering it.
