02/15/18 I am not a fan of boudin (boo-dan). I don't know what it is, but I've never really enjoyed it, which is odd because I was surrounded by it at home in Louisiana. So, when I decided to try these fried boudin balls and loved them, I was surprised. Baton Rouge Cuisine is a food truck in the Raleigh area that was started by a former Harlem Globetrotter from Baton Rouge. If that isn't enough to pique your interest, they also serve up some awesome Cajun food. Boudin is pork marinated in Cajun seasoning with slow cooked vegetables, shredded up and mixed with rice. These boudin balls are all of that rolled into a ball and deep fried with this amazing 'Who Dat' sauce to dip it in. The boudin itself is great. Spicy and savory with great texture. The rice is cooked well, and the pork and vegetables are great on their own as well. But the Who Dat sauce really completes it. It's a spicy and tangy mayonnaise-based sauce that is a great complement to the boudin balls, and I absolutely covered them with it. Overall, this is a great snack that really captures Cajun cuisine in a great way, just like everything else this Bigtime food truck has to offer.
