Kao Soy Chicken Noodle Soup at Rai Lay Thai in Charlotte, NC. Kao Soy is a type of noodle soup with both coconut milk and curry paste in it that is very popular in Thailand, especially in Northern Thailand near the Burmese border where it originated. I know a person loves Thai food when they're familiar with this dish, as most Thai restaurants in the States don't carry it and it's always a bonus when I find one that does! Rai Lay's version was tasty and comes with the requisite condiments found in its homeland - cilantro, red onions, pickled mustard, lime, and fried shallots. They give you a huge bowl with plenty of noodles, broth, and chicken. The broth itself has a nice flavor and consistency to it - not too much coconut milk and not too much curry paste. Great, enthusiastic service. I like the rest of their menu as well because it has traditional Thai dishes as well as items that you can't necessarily find at all Thai restaurants in the States - larb (ground chicken or ground pork salad), Thai beef jerky, Moo Ping pork skewers, and crab fried rice.
