Chicagoish Fried Bologna Sandwich at Hello, Sailor In Cornelius, NC. I’ve had fried bologna sandwiches before, but have always been underwhelmed. Luckily, however, I was dining with my buddy Matt and he’s always had a thing for fried bologna sandwiches, so we shared one and Hello, Sailor’s version was awesome! We both absolutely LOVED it, and had to immediately run it back (order another one). I especially liked the unique, thick piece of bologna, which was pan seared to give it a tad bit of char and texture on the outside. Resting inside a soft poppy seed bun, the bologna was accompanied by celery salt, mustard, and sport peppers (long, green peppers with medium spice), which gave it a little kick. I’m usually not a huge sandwich guy, but the bologna, bun, and accompaniments all complemented each other perfectly and the resulting blend of flavors make this a Bigtime sandwich! Hello, Sailor is the new sister restaurant of highly acclaimed Kindred, one of my favorite restaurants in the country. Owned and operated by Katy and Joe Kindred (a James Beard Award nominee for Best Chef, Southeast), Hello Sailor is in a beautiful space overlooking Lake Norman. Terrific service by friendly and knowledgeable servers. I also love their Hamachi Poke, Salt & Pepper Catfish, Smoked Chicken Wings, and Broiled King Crab With Ghee and Chili Salt.
