After hearing for years about how great FIG was, my wife and I made a point to get in there on our recent trip to Charleston. We didn't have reservations, but got in line just before it opened at 5 and snagged the last 2 spots at the bar once the doors opened. Everything we ate was phenomenal and it was one of the best start to finish meals we've had in awhile. This soup was seemingly simple, but packed bigtime flavor. The carrot soup itself was smooth and sweet, and the frothy cream it was served with added fattiness and thickness to the dish. Fresh peas were sprinkled throughout the soup. Peas sometimes get a bad rap, mostly due to how the frozen variety taste, but these were bright and vegetal. My favorite part of this dish were the toasted croutons. These had a great crust on them, but the bread inside was still soft, so after soaking up the hot soup, they were rich and so satisfying to bite into. This soup, while basic on paper, was a really good component to an amazing meal.
