03/11/18 Royal Myanmar Cuisine is located east of Atlanta in the Clarkston area on the way towards Stone Mountain. The restaurant is in a stand alone cozy building and has a small (4-5 appetizers, 14 main entrees and a few desserts) but varying menu of Burmese selections. The must try off the menu is the traditionally well known Fish Soup with Vermicelli Noodles ($9-10). It’s a simple dish with distinct and well balanced flavors. The main component of the dish is the fish stock broth which has a thicker consistency than ordinary soups, allowing this texturally savory soup to build on flavors from the tangy lemongrass notes, smooth richness from a flour slurry (chickpea or rice flour), mellow sweetness from garlic and saltiness from the fish. The soup doesn’t actually have fish pieces in it but the aroma and fish oils come through with each spoon full and with the help of the base ingredients the soup is not overly salty as one may expect with a fish stock. The rice vermicelli noodles offer a silky conveyor of the fish broth and helps balance some of the saltiness as well. Egg whites are also dropped into the soup giving it even more texture and smoothness. Garnishes include red chili powder, chopped cilantro and crispy split pea fritters. The crispy split pea fritters add the crunch to this dish and was something I requested more of because it rounded out the soup and noodles perfectly. With a squeeze of lime, small dabble of chili powder and pinches of aromatic cilantro this dish is as flavorful as it gets.
