03/29/18 Husk Greenville is one of the newest additions to Chef Sean Brock’s Husk dining restaurants and has some classic Husk dishes along with locally sourced products of the upstate South Carolina region. To start any evening at Husk the go to appeztizer is the Crispy Pig Ear Lettuce Wraps ($12). The main component of pig ears is thinly cut (shoe string fries size) and perfectly braised to give it a soft yet chewy texture without taking away the pork taste and aroma essence. Each sliver of pig ear is glazed with a squash sweet and sour sauce that is contrasted nicely by the pickled cucumber, chili flakes and toasted sesame seeds. The glaze/sauce has that conflicting sweet and sour base that is reminiscent of a Thai tom yum soup paste and balances the pork flavoring. The lettuce leaves give this dish a fresh, crisp taste to the porky reminents. I can snack on these wraps all day or eat 10 or more as a main dish. Be sure not to miss out when at Husk.
