The NC Catfish ($28) at Husk Greenville is an entree that utilizes a lot of the local ingredients of the region focusing on historical and/or lesser used products. Ingredients such as Runner Peanut and Carolina Gold Rice are sparsely known but the nutty richness from the peanut and the creaminess of the rice were prominent with this dish. The distinction for this dish comes from the collard green purée which adds a herbal bitterness to the flaky catfish and the sour corn used as a textural change up. The fish is lightly pan seared with a crispy skin and the added Potlikker (pork fat) ties all the ingredients together smoothly.
