Yes, it is my goal to eat risotto in every state & country.... this risotto from Cafe Terigo did not disappoint.
Normally, I wouldn’t choose risotto for lunch but because of the uniqueness of this one I had to order it.
The risotto was creamy and packed with tender smoked chicken breast. Perfectly cooked asparagus and the thing that brought it all together - sundried cherries.
I have never had cherries in a risotto and I can tell you right now, I will be recreating this when I make risotto at home. It was the perfect touch of sweet in the dish.
It was so good that if I was in Salt Lake City and had time to kill, I’d drive the 30 minutes to Park City just to enjoy it again.
