Premium Fatty Tuna at Kabuto in Las Vegas, NV. I've been to a lot of sushi joints all over the world, and this is my favorite one! It's a small, old school, traditional sushi place that primarily serves just nigiri and sashimi. They don't cut corners - the fish here comes directly from Japan and is as fresh as can be. In addition, you won't see imitation crab, cream cheese, or any of that amateur hour stuff at Kabuto. They have the typical fish you find everywhere (tuna, yellowtail, salmon), but also have fish that you rarely find in a sushi restaurant (e.g. triangle, red sea perch, live scallop, and sea bass). The thing that distinguishes Kabuto from everyone else is their toro (fatty tuna). They had five versions of toro last time I went (most restaurants don't even carry one version of toro because it's the highest grade of tuna you can get). It's unbelievably fresh and melts in your mouth. I would recommend ordering off the ala carte menu and ordering all the various forms of toro (listed inside a rectangular box at the top of the ala carte menu) and special types of fish instead of opting for the omakase menu. It's only open for dinner and they have two seatings per night at 6:00 pm and 8:30 pm. It can be hard to get into, so it's good to plan in advance. They take reservations by phone starting at 3:00 pm daily.
