This is my second time reporting on this same dish. I went back to the Matador with an old friend (Drew Warden). I considered ordering something new but we were short on time so I went with what I knew was good. What a pleasant surprise to find out they were even better the second time around. These unique tacos are a must try for any of you butternut squash fans. The combination of sweet and spicy just perfect for my liking. The pumpkins seeds and cotija cheese adding great texture and flavor. It was a total vegetarian experience today and I left feeling both satisfied and energized!
