The Fried Spare Ribs at SnackBoxe Bistro is a dish that truly sticks to the southeest asian street food movement. SnackBoxe Bistro is a fairly new outpost in the Hmart shopping strip just outside of Atlanta, GA. The owners wanted to bring Laotian street foods to the mass and the Fried Spare Ribs are a great start. The ribs are marinated in garlic, sugar, soy and fish sauce then deep fried before serving. The ribs maintain their marinade really and this can be tasted with each bite. The dark crispy outter fried skin have that disntinct charred soy and fish sauce bite. While the fattiness of the ribs is released as you sink your teeth into each rib creating a soft chew and sweet and salty taste. The ribs get a sprinkle of fried garlic while still hot so the smoky, nutty, sweet aroma from the garlic is also present. A side of thick chili paste is served on the side for dipping and should be used sparingly as it packs some heat, but does compliment the rib dish nicely. This is a great starter dish for anyone wanting to dip their toes into Laos street foods.
