This might be my favorite dish in the Charlotte area, outside of Kindred. There are so many bigtime flavors at play here. The buttery, gooey, almost gelatinous onsen egg, the pickled ginger that adds a bite, the sweet soy and ponzu sauces, the bright scallions, and finally, the tender and salty duck confit all sit on top of a bed of fluffy rice. The move here is to break the egg and swirl everything together. The egg coats the rice and helps everything stick together so you can get well proportioned bites. Can't put into words how key the rich egg yolk is to making this dish come together. Futo Buta has awesome ramen and some izakaya dishes that are definitely worth getting too (and fruity pebbles soft serve ice cream). There's a reason why Futo Buta gets a lot of love on BTB.
