Rendang (spicy braised short rib) at Bad Saint in Washington, DC is one of the best dishes out there. The restaurant was named the #2 best new places to eat a few years back and it lives up to that reputation. This dish has so many layers of flavor that can only be achieved by slow braising the short rib, bones in tact, with various spices and herbs. The short rib is tender and pulls apart off the bone like melting butter. The beef melts in your mouth, coating it with strong flavors of the beef marinade including kaffir lime, cumin, lemongrass and a sweet soy. And after only one bite, an instant rush of spice comes through that lingers perfectly when paired with the house barley rice. The leftover sauce that has trickled to the bottom of the plate is extra spicy with all flavors of the marinade present and makes a great sauce mixture for anything you can get your hands on to dip. As Bad Saint is known for their rotating menu, be sure to grab this dish if available. Big time for sure...
