Piniritong Alimasag is fried soft shell crab sitting on a paste made up of crab roe/fat, garlic, chili peppers and fish sauce. The fried soft shell crab is lightly coated in a panko batter mixed with garlic powder, black pepper and a little salty mix, possibly a light parmesan dusting. Each crab is crispy and has a oceanic crunchy bite by itself. When mixed and slathered with the thick crab roe paste the dish comes alive. It has a balanced spiciness and a salty, creamy feel from the roe and a smokiness from the roasted garlic. This is another Bad Saint dish that highlights the sauce base and allows a lot of flavors to be achieved with simple mixtures. Be sure to jump on this dish is available on their menu that night.
