07/14/18 Lewis BBQ is officially my go to bbq spot for anything smoked. I’ve had their other smoked meats/dishes, such as the brisket cheddar sandwich and smoked prime rib before, but the go to here are definitely the Sliced Beef Brisket and Hot Guts Sausage links. The beef brisket slices are served by the pound (~$21 per/lb) and Hot Guts Sausage are $5 per link. What you get out of each brisket slice can only be described as well seasoned meat butter. The brisket is made from the highest quality prime beef that has the perfect fattiness which melts all the way through with each slice. As you bite into the brisket, you instantly inhale the smokiness from the long, slow cooking process followed by a perfectly salty peppery seasoning from the charred bark. As you make your way through the amber smoke ring of the meat, you forget to chew because the fatty tender meat begins to deconstruct and melt in your fingers and mouth. All you are left with is fat drippings on your fingers coated with tiny morsels of the peppery seasoning and bark. I’d advise you not to eat the brisket with a fork because finger utensils are truly an experience to be had with this bbq. The Hot Gut Sausage links refuse to play second fiddle to the brisket as this meat compliments the fatty brisket beautifully with its crisp snappy exterior casing and spicy insides. The sausage mix is primarily beef and secret seasoning/spices but it has that extra juiciness from the well enclosed casing and smoking process. There’s definitely a pronounced heat from each bite of this meat but that’s what makes it stand out from other bbq sausages as it’s not afraid to add that spicy bite while letting the fat sooth your alarmed tongue.
