Cobia at The Noble South in Mobile, AL. Cobia is a white fish that you don’t see on menus too often, so when I saw it at The Noble South, I jumped on it. The Noble South’s version was terrific and by far the best dish I ate on a recent trip to Mobile. Tender, flaky, and firm all at the same time, yet super moist on the inside, the Cobia was fresh and grilled to perfection. A light sear on the outside gave it a little texture. The Cobia was accompanied by shisito peppers, grilled cherry tomatoes, a light roasted garlic vinaigrette, and maque choux (a medley of grilled corn, whose origins are from the Deep South). I loved all the accompaniments, as they complemented the Cobia well and were much more tasty and original than your regular mixed vegetables that typically accompany many fish dishes. The Noble South is a farm to table restaurant in downtown Mobile with a diverse menu, terrific food, and great service. Open for both lunch and dinner.
