Cafe Hitchcock is a cool little breakfast and lunch spot tucked into the Exchange Building in Seattle’s oldest neighborhood—Pioneer Square. The lunch menu is mostly salads and sandwiches but everything is done with a Cafe Hitchcock spin. On this trip I had the Hitchcobb Salad and I was not disappointed. On top of all the fresh veggies which formed the base of the salad they added some tender shredded chicken, a good amount of blue cheese and a soft boiled egg. There are a ton of Cobb salads on Seattle lunch menus but the chicken and the soft boiled egg make this one stand out.
