A5 Wagyu Beef at Yui Edomae Sushi. If you do any research on beef, you’ll see that A5 Wagyu Beef from Japan is the highest quality of beef you can find. Specific criteria such as yield quality and marbling are all factors in the alphanumeric rating system for beef, and A5 is the highest score a piece of beef can attain. I had heard this was a must-order item here, and it was indeed Bigtime! The beef was prepared over binchotan white charcoal and cooked a perfect medium rare. I’m not sure you’ll find a more tender and flavorful piece of meat out there - it literally melts in your mouth! Served with a daikon paste on top and drizzled with a tad of ponzu, the citrus from the ponzu balanced the radish nicely while still ensuring that the beef itself was the star of the show. Three spectacular pieces came on a skewer along with two small potatoes which were laced with truffle and pink Himalayan salt. Yui Edomae Sushi was founded by well known chef Gen Mizoguchi, formerly of renowned Kabuto in Vegas. They serve traditional sushi in an omakase format but also have an ala carte menu if you ask. Terrific service by friendly and knowledgeable servers. I also loved their otoro, premium fatty tuna. Open dinner only, with last seating at 10:30 p.m.
