Valentina's Tex Mex BBQ,
I have been going back and forth the last few weeks trying to figure out the right things to say, and it comes down to two simple words: THANK YOU!
My friends and I want to say THANK YOU to the entire Valentina's staff and all their fans who endure the (relatively short compared to Franklin BBQ) wait.
THANK YOU for serving up not just one of the best brisket tacos I've ever eaten, but one of the best tacos period.
THANK YOU for the homemade, lightly grilled and charred flour tortillas which add a slight crisp to the pillowy soft texture and buttery taste.
THANK YOU for stuffing that amazing tortilla with fatty, just salty enough pulled beef brisket so moist and tender that it nearly falls apart under your hungry gaze.
THANK YOU for the scoop of fresh guacamole, red tomato serrano salsa, and lime which give the taco a bright, zesty kick to punctuate the beefy flavor and cut some of the saltiness.
THANK YOU for standing out and making a commitment to simple but perfect execution in a town where new barbecue and taco joints pop up faster than when Kawhi Leonard sent Ben McLemore to the bench with consecutive rips.
Through all the ups and downs - I'm glad there were nothing but ups! - I'll never forget getting in line after a rainy day watching world class motorcycle racing, and how the anticipation and hype for your food were fully worth the wait.
While I'm looking forward to the next slice of delicious brisket and the next perfectly constructed taco in my scouting career, I'll always remember Valentina's, the truly unique place where you can get the best of both worlds.
