08/31/18 Vero is a stall in Denver Central Market (kinda similar to 7th Street in Charlotte, but a notch or two more upscale) that cranks out high quality pizza from a wood fired oven, as well as some pastas and salads. I asked the guy working the counter what the go-to was and without hesitation he suggested La Frizzi. Usually I'm skeptical of prosciutto and arugula pizzas (typically there's too much arugula and not enough prosciutto for my liking), but I trusted him and he did not let me down. This is one of the best pizzas I've had in recent memory. Starting from the base, the crust was crispy with a little char, yet airy; then a light spread of slightly sweet San Marzano tomato sauce; then perfectly melted, almost creamy mozzarella; then a liberal helping of thinly shaved prosciutto di Parma; then the perfect topping of arugula. The mozzarella and meat melded perfectly together and the arugula was not at all overwhelming and actually provided a nice freshness to contrast the salty cheese and ham. All told, this was a balanced and delicious pizza. Grab a couple beers at the market's bustling bar and you're set.
