Raindrop at Japonessa in Seattle, WA. The Raindrop is an off-menu item for those in the know and my favorite piece of sushi at Japonessa, one of my favorite sushi joints in the country. Alaskan snow crab is wrapped inside of seared salmon and topped with salmon roe, green onions, coconut shavings, mango purée, and a chili glaze. Just the right proportion of accompaniments highlight the freshness of the snow crab and salmon but yet bring out a medley of flavors that you won’t find in any other single piece of sushi. Japonessa is a contemporary Japanese restaurant with a hint of Latin flair. Owned and operated by renowned chef Billy Beach, Japonessa has two locations in the heart of downtown Seattle and across the bridge in Bellevue. I also love their albacore poke and spicy king crab soup. Open lunch, dinner, and late night.
