Diced Chicken in Spicy Chili Sauce at Lam’s Kitchen in Matthews, NC. It’s always a good sign when a Chinese joint has a lot of Chinese people in it, and such is the case with Lam’s Kitchen, a small hole in the wall just south of Charlotte. This is one of my go-to dishes if I’m in Chinatown in NYC, Chicago, or SF, and Lam’s Kitchen version is as good as you’ll find in any Chinatown. The chicken was very lightly fried with a nice texture to it and the seasoning and flavors were terrific - a great blend of garlic, ginger, and Chinese spices. The dried chili peppers gave the dish some heat, but wasn’t so overwhelmingly spicy that you had to constantly hydrate yourself (it looks hotter than it actually is). Lam’s Kitchen is the best Chinese joint in the Charlotte area, bar none. They have a diverse menu written in both English and Chinese as well as a sheet of Daily Specials. Open for both lunch and dinner (closed all day Tuesday and for lunch on Wednesday). I also love their Chinese Style Fried Rice, Beef with Long Peppers, Lamb with Cumin, and Malaysian Style Curry Chicken.
