The Publican is one of the original spots that put the now bustling West Loop of Chicago on the map. They specialize in family style meats (we got the porchetta which was exceptional) but the best bite of food we had was this appetizer that our waiter recommended. It's about as simple a dish as there is, but it is executed flawlessly. The fries are thick-cut, crispy on the outside and fluffy on the inside, and perfectly salted. Over the top of the fries are two fried eggs. The yolks are runny and easily broken to coat the fries, and the whites are crispy and add another yummy element to the plate. We also got a side of aioli for dipping that was delicious. Can't go wrong with perfectly fried potatoes and rich fried eggs. The Publican has cool communal seating, great beers, and is in the most lively neighborhood in town. Can't recommend it highly enough.
