Attention: Pizza connoisseurs. This is a must try pizza. Prior to spoiling my tastebuds at Bisonte, I’ve never heard of this pizza, but apparently it’s an iconic staple in Buffalo, NY. The owners - Jim & Steve, are two brothers from Buffalo. Bisonte (Italian) translates to Buffalo. Enough about Buffalo, this is my favorite specialty pizza at this restaurant and this place (in my opinion) has the best pizza in NC. Just so BigTime that it’s worthy of another report. What makes the buffalo chicken finger pizza a huge hit is the layer of bleu cheese underneath the regular cheese and toppings. Double layered cheese? Oh, yes. It’s a homemade bleu cheese base spread on top of Bisonte’s extraordinary pizza dough, topped with chicken fingers tossed in medium buffalo sauce, finished with fontinella and mozzarella cheese. There’s a pinch of spice from the buffalo sauce, and it makes this pizza exceptional. The final finisher - flavoring your crust. Experts know to go Cajun garlic on the crust. Provided an ample amount of time + relaxed atmosphere, I can crush this entire large pie in a booth in one sitting. Amazingly good. Bisonte knows how to do pizza properly.
