Arco Iris is a legit Cuban spot in West Tampa, the city's primarily Cuban neighborhood. The restaurant is a bit of a dive, and the food is authentic and delicious. Roasted pork is a Cuban staple and my go-to at any Cuban place, and Arco Iris' version is awesome! The pork is marinated in a really unique "mojo" sauce. The primary ingredients in mojo are sour orange juice and garlic, so the pork has a bit of a tang and a fragrant hint of garlic. The roasted pork is extremely tender and comes with sliced onions to add a bit of crunch and a bite. I love this dish! For sides I went with arroz moro (a black beans and rice mix) and fried plantains. Both were great. If you're in Tampa and want a real deal Cuban meal, Arco Iris is the place to go.
