07/11/17 Chicken Doner Kebab at Tombiq Doner Kebab in Marseilles, France. Doner Kebab is a Turkish dish made of seasoned meat in the shape of a vertical cone that is turned slowly on a vertical rotisserie. A cooking element slowly cooks the meat as it turns and the outer layers are sliced vertically into thin shavings then placed into a pita or tortilla to make a big sandwich. I LOVE a good doner kebab and will try numerous establishments until I find the right one that suits my fancy. Tombiq's version was excellent. The meat was perfect, as it had slightly burnt ends on it from circling around on the rotisserie. I also loved that they used a thin tortilla skin instead of a thick pita bread so you can taste the meat without the bread overwhelming it. After filling the tortilla skin, Tombiq puts it in a hot press, which warms the doner kebab and gives it nice burn marks on the outside. Good portion size, as it was roughly a foot long (they cut it into two pieces). Needless to say, I ran this one back!
