Roberta’s Pizza is a popular Brooklyn eatery serving great Italian food staples. But what they are known for here is their pizza and people line up to get a taste. The Famous Original is the gonto for the basic pizza sauce and cheese flavor that gives ground to the true star of the show, which is the pizza dough base/crust. This pizza is simply topped with crushed tomatoes, mozzarella, cociocavallo, parmigiano, oregano and chili. The oregano provides the earthy, herbal notes and pairing it with the salty cheeses and sweet tomatoes give a nice balance. But as said before, the star is the dough/crust. The crust was thin and chewy and had the bubbly char on the edges that provided the crispy smoke flavors. Pockets of yeast air would pop with each bite giving you a refreshing aroma of fresh baked bread. The more you chew, the more flavors from the dough come out which allows the sauce, cheeses and toppings to sink in for a very satisfying and must try experience.
