Kapong is the national noodle soup of Laos which has also has been adapted into ethnic Hmong cuisine. A combination of rice noodles, chicken, cabbage, silantro, green onions and lime in a red curry soup, you cannot go wrong with Kapong!
I thoroughly enjoyed experiencing Hmong food for the first time and the owners were happy that I asked for something authentic instead of Americanized. If you are in Hickory, NC, stop by Duck N Good for authentic Hmong cuisine!
