Cochon is an awesome Cajun/Southern restaurant in New Orleans' Warehouse District run by Donald Link, one of the city's best-known chefs and a James Beard award winner. It has a pretty casual atmosphere and a fun menu. My wife and I shared some oysters that were delicious and definitely worth ordering. For entrees she went with the catfish courtbullion (which she loved) and I got the cochon. I figured ordering the restaurant's namesake dish was probably a good idea, and I was proven right. Cochon is Cajun BBQ pork. This version has the pulled pork packed into a patty then seared on the flat top to get a little texture on the outside. The pork was really good, but not too heavy on the smoke as is popular in NC. It was really well seasoned and had a slight spice. The cochon was served on a bed of roasted cabbage cooked with bacon that added a nice acidity, sweetness, and depth to the dish. Perched on top of the pork were some bright pickled turnips and and crispy pork cracklins. All told, a really yummy dish.
