I rarely seek out brunch in Paris as my usual routine is to grab a delicious pastry from my favorite neighborhood boulangerie but it was later in the day & I wanted brunch.
I have walked past Zia (7th Arrondissement) several times since it opened late 2016 and while it’s small - only about 8 tables, it is always busy.
I went with a classic that I have fond memories learning to make in Junior High Home Economics class - the Dutch Baby.
O-M-G... this Dutch Baby was the perfect combination of light, doughy pancake, a dose of sweet maple syrup (enough but not drenched), crispy smoked bacon, nutty, creamy Comte cheese and a sunny-side up egg. Anything else in the dish would’ve been too much. Anything less would’ve made the dish lacking & incomplete. This dish was out of this world. It was simple, yet complex, with all the flavors melding perfectly together. A total party in my mouth.
