Carnitas Taco at China Poblano in Las Vegas, NV. One of my go-to dishes when I'm at a Mexican joint is a carnitas (pork) taco, so I've had my fair share of them - from hole in the wall 75 cent tacos (which I prefer) to fancy white linen $10 tacos. I absolutely love China Poblano's version of this taco, as the carnitas is super tender and the pork rinds, cilantro, diced onions, and guacamole give it a unique crunch and flavor that you'd be hard pressed to find anywhere else. China Poblano is a Jose Andrés restaurant in the Cosmopolitan Hotel that serves both Chinese and Mexican food. One of my favorite restaurants in the country, it has a diverse menu with some really Bigtime dishes! I also love their chicken soup, Viva China taco, lamb potstickers, and tuna ceviche.
