Bun Bo Hue at Green Bamboo in Cordova, TN. Bun Bo Hue, aka Spicy Beef Noodle Soup, is my go to dish whenever I visit a Vietnamese restaurant. Like a point guard, many versions exist, but no two are exactly alike. Green Bamboo’s version was terrific, and one of the best I’ve had in the United States. The broth is what sets this dish apart - just the right proportion of lemongrass, onions, garlic, fish sauce, shallots, chili peppers, and shrimp paste. Along with lime, cilantro, basil, vermicelli noodles, and sliced rare beef, the result is an amazing blend that’s spicy, sweet, tangy, and refreshing all at the same time. Bun Bo Hue typically comes with a mix of beef shank, meat balls, and ham, but I like it just with sliced rare beef (and on the side so it doesn’t get overcooked), and Green Bamboo was happy to oblige. Located just 20 minutes outside of downtown Memphis, Green Bamboo is open 7 days a week for both lunch and dinner. Great service by friendly and knowledgeable servers. I also love their fried egg rolls and quail. If you love Vietnamese food, don’t miss this dish at hands down, the best Vietnamese place in town!
