Lamb Potstickers at China Poblano in Las Vegas, NV. I'm usually not one to eat a potsticker and say "wow" afterwards, but when you take a bite of these potstickers, the flavors and juices inside burst into your mouth and all you can say is "wow!" The tender lamb filling has a trace of sweet onions and is not "gamey" at all like you might find in lamb dishes elsewhere. The presentation is unique in that the potstickers come connected through a cumin-seasoned crispy lace. China Poblano is a Jose Andrés restaurant in the Cosmopolitan Hotel that serves both Chinese and Mexican food. One of my favorite restaurants in the country, it has a diverse menu with some really Bigtime dishes! I also love their chicken soup, viva china taco, carnitas taco, and tuna ceviche.
