12/15/21 Grilled Branzino at Apolonia in Chicago, IL. Branzino, also known as Mediterranean Sea Bass, is a white, flaky textured fish that I love ordering because it isn’t as commonly found in restaurants as salmon, tuna, or tilapia. Apolonia’s version is terrific, as it is seared hard with skin on, creating a lovely blend of crispy skin on the outside coupled with moist fish on the inside that is mild in flavor and slightly sweet to taste. Served on a bed of castelvetrano olives, fresh dill, habanero, and lemon, the condiments pair perfectly with the fish without overpowering it. The branzino is accompanied by roasted fennel that has been finished with a trace of espelette, a red pepper seasoning that gives it a slight, yet mildly spicy kick. Located in the South Loop near Wintrust Arena, Apolonia is in a terrific, contemporary space with friendly service and knowledgeable staff. I also love their Fiorentini al Sugo, Salmon Tartare, and Warm Calamari Salad.
