Kampachi at Codex in Punta Mita, Mexico. Kampachi (also spelled kanpachi) is a rich, buttery, firm white fish that is commonly referred to also as Amberjack. Codex brings in their ultra-fresh kampachi from the Baja peninsula and cold ages it for 6 days. It’s hard to describe the flavors of the sauce that the kampachi sits in - so simple, yet complex at the same time. Yuzu sauce, avocados, lime juice, yellow lime purée, ground pepper, green spinach drops, and red chili drops from guajillo peppers add subtle yet delicious flavors. Slices of peach and green apples complement this amazing dish. Codex is located at the new (2020), spectacular Conrad Hilton resort in Punta Mita, Mexico. Excellent service in a beautiful setting right on the beach. I also loved their tuna, soft shell crab, and seafood soup.
