Lamb Belly with Gnocchi at Dory in Memphis, TN. This terrific dish was one of the fabulous dishes on the six-course tasting menu at my recent visit to Dory. The lamb belly itself was outstanding - super tender and not “gamey” at all like some lamb can be, and I love how it was seared to give it a little crispy texture. The gnocchi was a Perisian gnocchi (made of flour instead of potatoes) that melts in your mouth, and was accompanied by a fermented white bean purée, 63 degree egg yolk, and arugula oil. I’m typically not big on eggs, but this one worked perfectly with the bean purée and gnocchi. The egg is cooked sous vide style (i.e. slowly in a water bath) at 63 degrees Celsius (145 degrees Fahrenheit), which is the precise temperature where the egg yolk and the white are the exact same consistency. Located in East Memphis, Dory serves a six-course tasting menu Tuesday through Saturday and a four-course tasting menu on Tuesday.
