Tuna Ceviche at China Poblano in Las Vegas, NV. Ordinarily, I’m not that attracted to ceviche dishes, as most taste very similar, typically comprised of shrimp or fish tossed with some combination of lime, onions, cilantro, and diced tomatoes. The version at Jose Andres’s China Poblano restaurant, however, is a cut above any other ceviche I’ve experienced. Sashimi grade tuna is mixed in a soy-lime dressing along with red onions, avocados, cilantro, toasted pecans, Fresno and Serrano chili peppers, and crispy amaranth. The combination results in a medley of unique flavors and textures starting from the first bite. The crispy amaranth gives the dish a nice crunch that I haven’t experienced in any other ceviche. China Poblano has both Asian inspired and Mexican influenced dishes that you won’t find together at any other restaurant. Located in the Cosmopolitan hotel, it’s always one of my must stops anytime I’m in Vegas. I also love their viva china and carnitas tacos, as well as their caldo and pozole soups. If they ever bring back their lamb potstickers, it’s a must order as well. Great service with a vibrant atmosphere, don’t miss China Poblano next time you’re in Vegas!
