Ribeye Steak Burger at SO’OL in Playa del Carmen, MX. Who would have known that I’d find a Hall of Fame level burger in Mexico? In virtually every city I go to, I’m always looking for a great burger. My requirements, however, are a plenty. First and foremost, I like it medium rare, so the patty has to be thick (I’m not a smash burger guy). Second, it has to have a great bun - nice and soft, as a hard bun can ruin a good burger. Third, it has to be so juicy that it requires me to use multiple napkins. SO’OL’s version, located at the new Edition hotel in Playa del Carmen, was so good that I ordered it for lunch four straight days! The patty was good size at 200 grams (just over 7 ounces) and made of a delicious ground ribeye steak imported from the Baja region. The ultra soft brioche bun was made in house and was a perfect complement. Flame broiled over hot coals and cooked a perfect medium rare, the burger was so juicy I had to go personally thank the chef and cross examine him about the burger. The whole restaurant probably thought I was crazy!! Served with heirloom tomatoes, lettuce, red onions, pickled turnip, serrano chili, and a marinated homemade dressing comprised of eggs, olive oil, yuzu, and shallots (they call it a secret sauce the menu), this burger is only my 15th Hall of Fame dish on Bigtime Bites. It typically doesn’t come with bacon, as but as an example of how exemplary their service is, the staff was kind enough to get bacon from one of the other restaurants at the resort for me.
