Squid Ink Conchiglie at Kindred in Davidson, NC. One of my favorite pasta dishes in the country at one of my all-time favorite restaurants. One of the things that sets this dish apart is the abundance of Georgia Royal Red Shrimp, which is a bit like lobster, but sweeter and more tender. The squid ink conchiglie pasta (also known as sea shell pasta) was perfectly cooked. Mixed with a blend of sea urchin butter, tarragon, garlic, bay leaf, peppercorn, thyme, fennel, coriander, and tomatoes, the flavors in this dish are incredible. The sea urchin butter gives the dish a slightly salty, slightly sweet, rich, buttery and creamy texture to the dish, yet it’s light and airy at the same time. Located just outside of Charlotte in Davidson, Kindred is owned and operated by renowned chef Joe Kindred and his wonderful wife Katy. The GM, Tammy Winchester, is amazing and the service is impeccably performed by friendly and knowledgeable servers. Their menu changes occasionally, but I also love their crispy oysters, tuna crudo, and any seasonal fish or seafood they have that night.
