Found at Thomas Keller's legendary Per Se in New York, this dish receives considerable hype and is still somehow underrated. In a physical sense, it is a beautiful ensemble of pearl tapioca, briny oysters, and reclusive Osetra white sturgeon caviar. Where one might expect an elitist cacophony of flavors there is something that is unexpectedly accessible, arguably making it all the more rewarding. It is culinary perfection.
But at the end of the day, it is not simply food.
It's hearing your favorite musician for the first time. It's looking out at the sunset on a perfect summer evening. It's hugging your loved ones after reuniting at Christmas.
It is not on the last meal menu. It is the last bite.
