A very simple, yet complex dish - Owner/Chef Peter Cho's Budae Jjigae is only available during Han Oak's Sun-Mon evening Noodle & Dumpling Night(s). Otherwise, they serve a prixe fixe menu. As you can tell from the photo, this is a playful version of ramen, complete with SPAM, a slice of American cheese and a hotdog carefully crafted into an octopus shape. Once you give it a good stir (the cheese adds another level of complexity to the already very tasty pork & kimchi broth), you won't be able to put your utensil down until the bowl is empty. It's no wonder Cho has been featured in Food & Wine, Forbes & GQ in the past four months.
