Being on a diet is never easy or fun, but finding new creations of healthy dishes is possible. At Osteria Procaccini, the Contadino is the salad of all salads. Thin slices of prosciutto di parma, mixed greens, balsamic vinaigrette, shaved parmigano reggiano, extra virgin olive oil and a balsamic reduction comprise a healthy yet fulfilling meal. The flavors mix together perfectly and not one bit of lettuce is uncovered in the mixture. This makes my diet doable!
