Thanks to La Sirenita - a little hole-in-the-wall taqueria in Portland's Alberta Arts District - tacos pastor will forever be ruined for me anywhere else. I've searched far and wide for another pastor recipe that comes close to approaching these, but nothing else has come close. No frills, here. Just marinated pork, cilantro and onions in a corn tortilla. I don't know what all goes into their marinade, but I hope they never change it: it's packed with flavor, not too spicy, just the right texture, and very messy - don't worry about extra napkins, because this stuff is finger lickin' good. Vet move #1: swing by their condiment area and grab a few lime wedges and salsa verde - these tie in all of the flavors very well. Vet move #2: these tacos will make you thirsty - do yourself a favor and try their horchata.
