Quince is my favorite Italian restaurant in the USA. The main dining room only has a choice of 2 tasting menus. A diner who eats in the Salon area has a la carte options. The tasting menus are $200+. This King Salmon dish was part of the larger 15+ course tasting menu. The ingredients were of the highest quality, and the cohesiveness of the flavors were memorable which shouldn't be surprising since Quince received its 3rd Michelin star a few years ago---a designation which is one of the, if not THE, most prestigious design in the world.
