“The Matador” at Torchy’s Tacos in Dallas, TX. Torchy’s is a regional Tex Mex chain that started in a food trailer park in Austin, TX, and now has locations throughout Texas. The Matador is on the secret menu, which can be found online with a quick Google search. Uniquely, The Matador has a crisply fried corn tortilla with melted jack cheese on top, which is then wrapped in a flour tortilla on the outside. The inside has chopped brisket, grilled jalapenos, pickled purple onions, avocado, sour cream, and cilantro. The brisket is lean, as compared to "moist brisket" that has more fat, and the grilled jalapenos add some nice flavor without being too spicy. The rest of the ingredients add some complexity to the flavor profile.
The tacos here are big, so most people only order two. The Matador is one I keep in my rotation along with the Trailer Park (“trashy style” with queso instead of shredded cheese), Baja Shrimp, and The Hipster (also on the secret menu). Keep an eye out for their Taco of the Month. My favorite is their fried chicken and waffle taco that usually shows up during the month of March.
