Coi since January of 2016 has a new executive chef---Matthew Kirkley who was the second youngest chef in the USA to receive 2 Michelin stars; this occurred when he was the executive chef of Chicago's L2O. Coi is my favorite seafood restaurant in the USA, yes, I favor it over the more celebrated Le Bernardin. No one in America has better plating skills than Matthew. But obviously the taste of the dishes is what really matters, and Matthew is able to marry beautiful looking dishes with dishes that are complex and sophisticated.
