I can't eat Thai food in America. Even the most "authentic" Thai restaurants in the U.S. do not seem authentic to me. I have been to Thailand many times and this garlic fried sea bass dish is one of my favorites. Pattaya is right on the beach so the fish is caught fresh by the fishermen and then cooked right away. What makes this dish special is that the fish is lightly breaded so that it is just crispy enough and the breading does not overpower the sweet, succulent taste of the sea bass. There is an ample amount of toasty garlic too that creates a symbiotic manifestation of culinary delight when combined with the sea bass.
The hotel itself isn't anything great but it's cheap and right on the beach. None of the other food there was anything special but this garlic fried sea bass was fantastic!
