If guests coming through town have time for one meal, I take them to Soul Gastrolounge. Why? My single-favorite dish in Charlotte. Traditionally, pork belly is not something I'm into, but Soul's rendition qualifies for first-ballot HOF status: you need to try these asian glazed pork belly tacos before you die. Wherever you'd expect this particular pork belly to be fatty (because pork belly is always fatty - but not this), it's crispy and flavorful. The glaze/marinade is out of this world. The watermelon "salsa" plays its role to perfection. Two to an order, but they will accommodate to make sure everyone at the table (even if it's an odd number) is covered. This taco is three bites. Don't pull out your fork and knife and dissect it - trust me on this. This dish is an absolute must for anyone in the Charlotte area.
